Libre y Salvaje is a small winery in Almonacid de la Sierra where we are working on recovering old vineyards of Grenache and Cariñena, and pushing to rediscover an area with amazing soils, vineyards and people. We have 18 hectares spread into 25 plots of 80 years old vines. The vines are organically farmed, either certified or in the process of being certified. It has extremely poor soils and high sand content in its first horizons, which reduces water retention during maturity. Presence of calcareous betas that give the vineyard a special particularity.Manual harvest with selection of bunches in the field and a second one on the selection line. Spontaneous fermentation in a oak barrels.
Crimson colour, forest fruit confit notes. Straight at the mouth, long finish, nice bitterness at the end. Confit cherries in the aftertaste and lightly herbal.
